Funfetti White Chocolate Rice Krispie Treats are the perfect way to kick off March and start the St. Patty's day celebrations.  There are few treats that you know everyone is going to love and Rice Krispie treats is just that.  A classic dessert that kids and adults both love, but why keep them basic?  Here is how you make classic Rice Krispie Treats even more fun!

Every time I make Rice Krispie treats, no matter what the flavor is, I bump up the amount of butter and marshmallows.  We all like ooey gooey treats and adding more marshmallows is the best way to do it.  Although I love the pure flavors of the ingredients, I added a secret ingredient that is going to wow your family.  Lemon zest will add a punch of flavor that will surprise everyone and give these a wonderful spring flavor.  Once you melt the butter, your next step is to add in the marshmallows and lemon zest.  Adding the lemon zest at this time will ensure that you get the flavor in each bite.  When everything is melted you will remove the pan from the stove, add in the cereal and your favorite rainbow sprinkles.  Pour the rice krispie treats into a lined pan and allow them to cool completely before cutting.

White Chocolate
I love dipping Rice Krispie Treats in white chocolate but even more delicious when there is lemon zest and rainbow sprinkles.  If you are using regular white chocolate, add in shortening before melting to thin out the chocolate and make it smoother to dip.  Although I prefer the flavor or white chocolate over almond bark, almond bark melts easy and is a good option as well!  Once you dip half the Rice Krispie treat into the white chocolate you will place the treat onto a lined sheet pan. Garnish the white chocolate with rainbow sprinkles while the chocolate is wet so that they will stick.  You will love the flavor that the white chocolate gives to these Funfetti White Chocolate Rice Krispie Treats and you are ready to begin your celebration!

Ingredients

4 Tbsp Unsalted Butter
6 Cups Mini Marshmallows
6 Cup Rice Krispie Cereal
½ Cup Rainbow Sprinkles
1 Tbsp Lemon Zest

Garnish:
2 Cups White Chocolate
1 Tbsp Shortening
½ Cup Rainbow Sprinkles

Instructions

Prepare an 8×8 inch square pan with parchment paper
In a large saucepan, melt the butter completely
Once the butter is melted, add in 6 cups of mini marshmallows and lemon zest; stir until completely melted
Remove the saucepan from the heat and stir in the Rice Krispie cereal into the marshmallow mixture and mix until fully coated
Add in the rainbow sprinkles and mix until sprinkles are mixed throughout
Pour the mixture into the prepared pan and allow it to cool completely before cutting
Once they are ready to cut, remove the Funfetti Rice Krispie Treats from the pan and cut into desired size
In a microwave safe bowl, melt the white chocolate and shortening stirring every 30 seconds until completely melted and white chocolate is smooth
Dip the Rice Krispie squares half way into the white chocolate and place on a parchment lined baking sheet
Add sprinkles on top of the white chocolate before it cools and hardens
