Ingredients

  • 1 Cup Old Fashioned Oats
  • ½ Cup Unsweetened Coconut, shredded
  • ¾ Cup Almond Butter
  • 4 Tbsp Honey
  • 2 Tbsp Cocoa Powder
  • ¼ Cup Mini Chocolate Chips
  • ¼ Cup Chopped Almonds
  • 1 tsp Vanilla Extract
  • Garnish: Unsweetened Shredded Coconut

Instructions

  1. In a medium bowl combine all the ingredients
  2. Stir until all the ingredients come together and start to stick
  3. Using a small ice cream scoop, scoop the batter and roll into balls (I like mine to be about 1” in diameter)
  4. After you roll each into a ball, cover each ball in shredded coconut
  5. Place the energy bites in an airtight container and refrigerate until ready to eat
