PB&J Bars are a classic made into a dessert! Crumbly, crunchy and filled with your favorite jelly these PB&J Bars will make you feel like a kid
Its the weekend and the what I love most, is the lack of routine. No early mornings, no lunches to make and the kids can just run free outside.
Just about every morning we are preparing lunch and PB&J is always on rotation. I love the flavors of fresh sandwich bread, creamy peanut butter and jelly and so do my girls. While these flavors bring me back to my childhood, they might be even better in a PB&J Bar. Not overly sweet, tasting similar to the best peanut butter cookies, layered with raspberry jelly (your favorite jelly can be used), crumbled peanut butter cookie and crunchy salted peanuts on top.
- ½ Cup Butter, Unsalted
- ¾ Cup Granulated Sugar
- 1 tsp Vanilla Extract
- 1 Egg
- 1 Cup Creamy Peanut Butter
- 1½ Cups All Purpose Flour
- ½ tsp Baking Powder
- 1 tsp Salt
- 1 Cup Jam (Raspberry, Grape or Strawberry)
- ⅓ Cup Salted Peanuts, Chopped
- Preheat oven to 350 degrees F and prepare a ¼ sheet pan with parchment paper
- In a medium bowl combine flour, baking powder and salt; set aside
- In mixing bowl with paddle attachment, cream together the butter, sugar and vanilla extract until smooth
- Add egg and peanut butter to butter mixture and beat until combined
- Add in dry ingredients to the peanut butter mixture and mix until smooth
- Divide ⅔ of the batter and spread on the ¼ sheet pan
- Spread your jam on top of the batter
- Crumble the remaining peanut butter batter on to the top of the jam
- Sprinkle with chopped peanuts
- Bake for 30 minutes until the cookie dough is lightly golden
