- 1/2 Cup Butter, Unsalted
- 3/4 Cup Granulated Sugar
- 1 tsp Vanilla Extract
- 1 Egg
- 1 Cup Creamy Peanut Butter
- 1 1/2 Cups All Purpose Flour
- 1/2 tsp Baking Powder
- 1 tsp Salt
- 1 Cup Jam (Raspberry, Grape or Strawberry)
- 1/3 Cup Salted Peanuts, Chopped
Instructions
- Preheat oven to 350 degrees F and prepare a 1/4 sheet pan with parchment paper
- In a medium bowl combine flour, baking powder and salt; set aside
- In mixing bowl with paddle attachment, cream together the butter, sugar and vanilla extract until smooth
- Add egg and peanut butter to butter mixture and beat until combined
- Add in dry ingredients to the peanut butter mixture and mix until smooth
- Divide 2/3 of the batter and spread on the 1/4 sheet pan
- Spread your jam on top of the batter
- Crumble the remaining peanut butter batter on to the top of the jam
- Sprinkle with chopped peanuts
- Bake for 30 minutes until the cookie dough is lightly golden
