PB&J Bars

PB&J Bars are a classic made into a dessert!  Crumbly, crunchy and filled with your favorite jelly these PBJ Bars will make you feel like a kid

  • 1/2 Cup Butter, Unsalted
  • 3/4 Cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 Egg
  • 1 Cup Creamy Peanut Butter
  • 1 1/2 Cups All Purpose Flour
  • 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 1 Cup Jam (Raspberry, Grape or Strawberry)
  • 1/3 Cup Salted Peanuts, Chopped


  1. Preheat oven to 350 degrees F and prepare a 1/4 sheet pan with parchment paper
  2. In a medium bowl combine flour, baking powder and salt; set aside
  3. In mixing bowl with paddle attachment, cream together the butter, sugar and vanilla extract until smooth
  4. Add egg and peanut butter to butter mixture and beat until combined
  5. Add in dry ingredients to the peanut butter mixture and mix until smooth
  6. Divide 2/3 of the batter and spread on the 1/4 sheet pan
  7. Spread your jam on top of the batter
  8. Crumble the remaining peanut butter batter on to the top of the jam
  9. Sprinkle with chopped peanuts
  10. Bake for 30 minutes until the cookie dough is lightly golden
