Prepare the cocktail glasses by rubbing a slice of lime on the edge of the glass and then dip the rim of the glass in a spicy margarita salt; set aside
In a cocktail shaker, muddle the sliced cucumbers and mint leaves to release the juices
Add in the tequila, lime juice and simple syrup
Shake until all ingredients are combined
Fill the prepared cocktail glass with ice and pour the cucumber margarita over the ice
Garnish with fresh mint leave and a slice of cucumber

Simple Syrup
1 Cup Granulated Sugar
1 Cup Water
- Combine both ingredients in a small sauce pan and bring to a simmer until the sugar is dissolved
- Allow the syrup to cool completely and store in a air tight glass jar
- Store in the refrigerator until ready to use
