Prepare the Lemon Simple Syrup
In a small saucepan combine the water, granulated sugared and lemon peel
Bring the sugar and water to a simmer until the sugar is dissolved
Remove the saucepan from the heat and allow the simple syrup to cool completely before pouring into a jar
Store the simple syrup in the refrigerator until ready to use
Prepare the Lemon Cucumber Gin Fizz
In a cocktail shaker combine the gin, fresh squeezed lemon juice, cucumber juice and lemon simple syrup and shake to combine
Add the egg white to the mixed cocktail and shake to create a foam
Pour the mixed cocktail into a glass with ice and top off with a splash of sparkling water
Garnish the Lemon Cucumber Fizz with fresh mint leaves and a slice of cucumber
*How To Make Cucumber Juice:
Place sliced cucumbers in the cup of the blender and blend on high speed until it is smooth and liquid. Strain the cucumber juice to remove any of the skin and seeds and pour into a jar.
Simple Syrup Vs. Agave Syrup
I love making homemade simple syrup so that I can flavor the syrup to go with my cocktail, but if you don't have time to make your own you can always add agave syrup or store bought simple syrup for an extra boost of sweetness in your cocktail.
