Prepare the Spiced Lamb
Preheat the grill to 400 degrees or medium-high heat
In a large skillet over medium heat, add olive oil and garlic and saute for one minute
Add the ground lamb to the pan and saute until browned and cooked through
Add the tomato paste, cumin, coriander, salt and pepper to the meat and continue stirring and cooking for 2 minutes
Remove the pan from the heat and set aside
Prepare the Flatbread
Layout the naan flatbread on a baking sheet
Drizzle a small amount of olive oil on the 4 Naan Flatbreads and sprinkle with the Za'atar Spice Blend on the top of each of them
Divide the shredded mozzarella and sprinkle it to cover the top of each of the naan bread
Add the ground spiced lamb on the top of the mozzarella cheese and top with thin slices of red onion
Once the grill is hot, place the 4 Lamb Naan Flatbreads on the grill, close the grill top and cook until they start to turn golden brown in color and the cheese is melted (5-8 minutes)
Remove the Lamb Flatbreads from the grill and place them on a serving platter or board
Sprinkle the top of the grilled flatbreads with feta cheese and cilantro leaves and serve warm with Tzatziki Sauce
