In a large pitcher combine the fruit (cherries, nectarines, apricots and sliced lemons)
Pour the St. Germain Liqueor and lemon juice over the fruit
Pour the bottle of rosé into the pitcher and allow the fruit to infuse in the rosé wine for one hour
When you are ready to serve the sangria, fill individual glasses with ice, pour the sangria into each glass, divide the fruit slices and top off each glass with a splash of sparkling water (optional: garnish with fresh mint)
