Citrus Marinated Olives

Citrus Marinated Olives are a super easy and delicious appetizer that you can add to your favorite charcuterie board, serve as a bar snack or enjoy on their own. Made with assorted olives, fresh herbs, lemon juice and rind and sliced garlic, these marinated olives are ready to serve and enjoy at your next gathering!

Ingredients

  • 3 Cups Assorted Olives Pitted Kalamata and Pitted Green, drained and rinsed
  • 1 Cup Olive Oil
  • 1 Tablespoon Fresh Thyme Leaves
  • 1 Tablespoon Fresh Rosemary
  • 2 Strips of Lemon Rind
  • 1 Garlic Clove Sliced Thin
  • ¼ Cup Fresh Lemon Juice

Instructions

  • Combine the olives in a wide mouth jar; set aside
  • Combine the olive oil, thyme, rosemary, lemon rind and garlic in a small sauce pan and warm on low heat
  • Pour the olive oil mixture over the olives and then pour the fresh lemon juice over the olives
  • Close the lid of the glass jar and shake the olives until fully combined
  • Refrigerate the marinated olives for 2-3 hours or up to 2 weeks

Notes

*Olives- Sometimes olives can be extra salty from sitting in their juice so make sure to drain and rinse them in a strainer before marinating.
