In a medium bowl, combine the peanut butter, light brown sugar, whisked egg and vanilla extract; mix until fully combined
Chill the cookie batter for 10 minutes to allow the dough to harden and scoop easier
Preheat the oven to 350 degrees F and prepare a baking sheet with parchment paper
Scoop the Peanut Butter Cookies onto a lined baking sheet, gently press them down and using a fork create a grid design on top
Sprinkle each cookie with course sea salt
Bake for 10-12 minutes or until the cookies are slightly golden brown
Allow the cookies to cool completely before moving them from the baking sheet (they will be very soft until they cool down)
