Prepare Strawberry Simple Syrup
In a small sauce pan combine the granulated sugar, water and strawberries and bring to a boil until the sugar is fully dissolved
Remove the sauce pan from the heat and gently smash the strawberries to release the juice and allow them to infuse in the syrup for 1o minutes
Strain the simple syrup to remove the strawberries, pour into a glass jar and cool at room temperature or in the refrigerator
Prepare Strawberry Gin and Tonic
In a low ball or high ball glass, fill the glass with ice
Pour the strawberry simple syrup and then layer with tonic water and top off with gin (Empress Gin for the beautiful blue color)
Gently stir to combine all flavors
Garnish with lime slices and a fresh sprig of thyme or mint; serve and enjoy

If you prefer a classic Gin and Tonic, you can remove the strawberry simple syrup and add ½ ounce of fresh lime juice
Save The Simple Syrup
If you have simple syrup left over, seal it in a jar and keep it refrigerated for up to one month and can be enjoyed in all your cocktails or can be used to make a strawberry lemonade!
