Prepare an 8×8 inch square pan with parchment paper
In a large saucepan, melt the butter completely
Once the butter is melted, add in 6 cups of mini marshmallows and lemon zest; stir until completely melted
Remove the saucepan from the heat and stir in the Rice Krispie cereal into the marshmallow mixture and mix until fully coated
Add in the rainbow sprinkles and mix until sprinkles are mixed throughout
Pour the mixture into the prepared pan and allow it to cool completely before cutting
Once they are ready to cut, remove the Funfetti Rice Krispie Treats from the pan and cut into desired size
In a microwave safe bowl, melt the white chocolate and shortening stirring every 30 seconds until completely melted and white chocolate is smooth
Dip the Rice Krispie squares half way into the white chocolate and place on a parchment lined baking sheet
Add sprinkles on top of the white chocolate before it cools and hardens
