Ingredients

  • 1 Cup Peanut Butter
  • 1/2 Cup Unsalted Butter, Soft
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Light Brown Sugar
  • 1 Egg
  • 1 1/2 Cups All Purpose Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 Cup Peanut Butter Chips
  • Grape Jelly

Instructions

  1. Preheat oven to 350 degrees F
  2. In a mixing bowl with paddle attachment, cream together the peanut butter, butter, granulated sugar and brown sugar until smooth
  3. Add egg in peanut butter mixture
  4. In a medium bowl, combine the flour, baking soda and salt
  5. Slowly add the flour mixture into the peanut butter mixture and mix until fully combined
  6. Remove from the mixer and fold in the peanut butter chips
  7. Scoop the dough into 1 tbsp balls and press into mini muffin pans
  8. Press a slight indention into the cookie to allow a space for the jelly
  9. Place 1 tsp of grape jelly into each cookie dough indention
  10. Bake at 350 degrees for 10-12 minutes or until dough is golden on the edges (do not over bake)
  11. Allow the cookies to cool before removing them from the muffin molds
  12. Serve or store in an air tight container
