Chocolate Cranberry Slice and Bake Cookies

Ingredients

  • 3/4 Cup Unsalted Butter
  • 1/2 Cup Granulated Sugar
  • 1 Egg
  • 2 Cups All Purpose Flour
  • 1 Tbsp Vanilla Extract
  • 1/2 Cup Dried Cranberries, Chopped
  • 1/2 Cup Chocolate Chunks, Chopped
  • Garnish:
  • 1 Egg (for egg wash)
  • 1 Cup Clear Sugar Crystals

Instructions

  1. In a mixing bowl with paddle attachment, combine the butter and sugar
  2. Mix on medium speed until creamed together and fluffy
  3. Add in one egg and vanilla extract; continue mixing until combined
  4. Add in flour and mix until smooth and all ingredients have come together
  5. Add dried cranberries and chocolate chunks to the dough and mix on low speed until fully combined
  6. Remove the dough from the bowl and shape into a ball
  7. Divide the dough in half and roll into a log
  8. Lightly brush *egg wash onto the dough and roll the log into sugar crystals to cover the outside
  9. Place the log on wax paper and roll up, pressing firm to create a package
  10. Twist the end of the wax paper to seal it shut
  11. Refrigerate the dough until ready to bake
  12. Baking Instructions:
  13. Preheat the oven to 350 degrees F
  14. Remove the dough from the refrigerator and slice the cookies into 1/4 inch thick pieces
  15. Place the cookies onto a parchment lined baking sheet
  16. Bake for 8-10 minutes or until cookies is a light golden color
  17. *Egg Wash:
Whisk one egg in a bowl and add a splash of water
