Blueberry Cinnamon Bread

Ingredients

  • 2 Cups All Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/2 Cup Unsalted Butter, softened
  • 1/2 Cup Light Brown Sugar
  • 1/4 Cup Granulated Sugar
  • 2 eggs
  • 1 tsp Vanilla extract
  • 1/2 Cup Sour Cream
  • 1/2 Cup Milk
  • 1 Cup Blueberries, fresh or frozen

Instructions

  1. Preheat oven to 350 degrees F and prepare a loaf pan brushed with melted butter or nonstick spray
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, salt and cinnamon; set aside
  3. In a mixing bowl with paddle attachment, combine the butter, brown sugar and granulated sugar; mix until butter and sugar are combined
  4. Whisk together the eggs, sour cream, milk and vanilla extract and add to butter mixture
  5. Slowly add the dry ingredients to the wet ingredients and mix until combined; scrape down the sides of the bowl in between
  6. Remove the bowl from the stand mixer and fold in the frozen or fresh blueberries
  7. Pour the batter into the prepared loaf pan
  8. Add the crumb topping to the Blueberry Cinnamon batter
  9. Bake at 350 degrees F for 55-60 minutes or until cake tester comes out clean
  10. Allow the bread to cool before removing it from the loaf pan
  11. Store in an airtight container until ready to serve.
