Pumpkin Spice Whoopie Pies are the perfect combination of cake and cookie, sandwiched between the fluffiest Marshmallow Cream Icing.  Get ready to fall in love with my favorite cookie!

Ingredients

  • 1 1/2 Cups All Purpose Flour
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 Cup Light Brown Sugar
  • 1/2 Cup Vegetable Oil
  • 1 1/2 Cups Pumpkin Puree
  • 1 Egg
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat oven to 350 degrees F
  2. Prepare sheet pan with parchment paper
  3. Whisk together flour, baking powder, baking soda, salt, cinnamon, ginger
  4. Cream oil and brown sugar together with paddle
  5. Mix in the egg. pumpkin puree and vanilla extract to butter mixture
  6. Slowly add flour mixture until combined
  7. Using a 3/4 oz scoop, scoop the batter on to a parchment lined sheet pan, leaving space in between to spread
  8. Bake cookies for 10-12 minutes or until the cookie springs back when touched
  9. While the cookies cool, make the Marshmallow Cream Icing
  10. Once the icing is made, spread the icing onto 12 cookies and then place the other 12 cookies on top the icing to create a sandwich
  11. Serve immediately or store in air tight container

Notes

  • you can use a smaller or larger scoop depending on the size you want the whoopie pies to be!
