Ingredients

Banana Chocolate Chip Muffins

  • ½ Cup Unsalted Butter Melted
  • ½ Cup Light Brown Sugar
  • 1 Large Egg
  • 1 Cup All Purpose Flour
  • ½ Teaspoon Baking Soda
  • ¼ Teaspoon Ground Cinnamon
  • 2 Ripe Bananas
  • ½ Cup Mini Semisweet Chocolate Chips

Cinnamon Sugar

  • 2 Tablespoon Granulated Sugar
  • 1 Teaspoon Ground Cinnamon

Instructions

  • Preheat oven to 350 degrees F and spray a mini muffin pan with non-stick baking spray; set aside.
  • In a large bowl combine the melted butter, light brown sugar and egg and whisk until ingredients are fully combined.
  • Mash the ripened bananas and fold the mashed bananas into the egg mixture.
  • Whisk the flour, baking soda and cinnamon into the batter until smooth.
  • Fold the mini chocolate chips into the banana batter.
  • Scoop the muffin batter into the prepared muffin pan and fill ¾ full. Sprinkle the top of each muffin with cinnamon sugar mixture.
  • Bake for 10-12 minutes or until the muffin springs back at the touch.
  • Remove the muffins from the oven and allow them to cool for 5 minute before removing them from the muffin pan.

Cinnamon Sugar

  • Combine the cinnamon and granulated sugar and mix to combine; set aside until ready to use.
