Banana Chocolate Chip Muffins
Preheat oven to 350 degrees F and spray a mini muffin pan with non-stick baking spray; set aside.
In a large bowl combine the melted butter, light brown sugar and egg and whisk until ingredients are fully combined.
Mash the ripened bananas and fold the mashed bananas into the egg mixture.
Whisk the flour, baking soda and cinnamon into the batter until smooth.
Fold the mini chocolate chips into the banana batter.
Scoop the muffin batter into the prepared muffin pan and fill ¾ full. Sprinkle the top of each muffin with cinnamon sugar mixture.
Bake for 10-12 minutes or until the muffin springs back at the touch.
Remove the muffins from the oven and allow them to cool for 5 minute before removing them from the muffin pan.
