Remove the skin and bones from the rotisserie chicken and shred the meat (both dark and white meat) using a fork or your hands and place in a large mixing bowl.
Add the finely diced celery, finely diced apples and chopped dried cranberries to the shredded chicken and mix to combine.
Add the mayonnaise and mix until the chicken salad is creamy and fully coated.
Season the chicken salad with salt and pepper, mix until combined and then sprinkle the top of the chicken salad with fresh dill for garnish.
Chill the chicken salad for at least 30 minutes before serving.
