Ingredients

Scale

Crust
1 Cup All Purpose Flour, Sifted
1 Tablespoon Light Brown Sugar
1/2 Cup (1 Stick) Unsalted Butter, Melted 

Filling
1/4 Cup All Purpose Flour
1/2 Teaspoon Baking Powder
1/8 Teaspoon Salt
2 Eggs
1 1/2 Cups Light Brown Sugar
1 Teaspoon Vanilla Extract
3/4 Cup Coconut, Shredded
1 Cup Semi Sweet Chocolate Chips

Instructions

Prepare The Crust

  1. Preheat oven to 350 degrees F and prepare a 9x9 square pan lined with parchment paper
  2. In a mixing bowl with paddle attachment, combine the flour and light brown sugar, slowly add in the melted butter and mix until fully combined and dough comes together
  3. Evenly press the dough into the prepared pan
  4. Bake for 12-15 minutes or until the dough looks cooked but not yet golden brown
  5. Remove the crust from the oven and allow it to cool while preparing the filling 

Prepare the Filling

  1. In a medium bowl, combine the flour, baking powder and salt; set aside
  2. In a mixing bowl with a paddle attachment, mix together the eggs, light brown sugar and vanilla extract
  3. Slowly add the dry ingredients to the wet ingredients and mix until combined
  4. Using a spatula, fold the shredded coconut and chocolate chips into the batter
  5. Pour the filling over the pre-baked crust and bake for 15-18 minutes or until the top is a light golden brown color
  6. Remove the bars from the oven and allow them to cool and refrigerate for 1-2 hours to allow the center to set
  7. Cut the bars into 1x3 inch rectangles and place on a platter to serve
  8. Optional: dust with powdered sugar or drizzle with chocolate
