An old fashion recipe coming straight from my Grandma's Kitchen, Yum Yum Bars are a delicious cookie bar that starts with a cookie crust and topped with a gooey, chocolate chip and coconut center.

Ingredients

Crust
1 Cup All Purpose Flour, Sifted
1 Tablespoon Light Brown Sugar
½ Cup (1 Stick) Unsalted Butter, Melted
Filling
¼ Cup All Purpose Flour
½ Teaspoon Baking Powder
⅛ Teaspoon Salt
2 Eggs
1 ½ Cups Light Brown Sugar
1 Teaspoon Vanilla Extract
¾ Cup Coconut, Shredded
1 Cup Semi Sweet Chocolate Chips
Instructions
Prepare The Crust
- Preheat oven to 350 degrees F and prepare a 9x9 square pan lined with parchment paper
- In a mixing bowl with paddle attachment, combine the flour and light brown sugar, slowly add in the melted butter and mix until fully combined and dough comes together
- Evenly press the dough into the prepared pan
- Bake for 12-15 minutes or until the dough looks cooked but not yet golden brown
- Remove the crust from the oven and allow it to cool while preparing the filling
Prepare the Filling
- In a medium bowl, combine the flour, baking powder and salt; set aside
- In a mixing bowl with a paddle attachment, mix together the eggs, light brown sugar and vanilla extract
- Slowly add the dry ingredients to the wet ingredients and mix until combined
- Using a spatula, fold the shredded coconut and chocolate chips into the batter
- Pour the filling over the pre-baked crust and bake for 15-18 minutes or until the top is a light golden brown color
- Remove the bars from the oven and allow them to cool and refrigerate for 1-2 hours to allow the center to set
- Cut the bars into 1x3 inch rectangles and place on a platter to serve
- Optional: dust with powdered sugar or drizzle with chocolate
