There is nothing better than ending a warm summer night with a cold and refreshing cocktail and this Blackberry Tequila Lemonade is exactly what I have been sipping on by the pool. Made with the freshest seasonal fruit, muddled blackberries and mint, shaken up with freshly squeezed lemons, simple syrup and your favorite tequila. Once these ingredients are fully combined, pour this beautiful purplish red cocktail over ice and finished off with a splash of sparkling water.

Blackberries-Fresh blackberries, not frozen are the best while making this recipe.
Mint-Adding an extra pop of flavor, fresh mint leaves are a great earthy addition but can be eliminated if you don't love the flavor of mint.
Lemon Juice-Fresh squeezed lemon juice will create a delicious pure and tart flavor, using bottled lemon juice will slightly change the flavor.
Simple Syrup-Made with two simple ingredients, sugar and water, simple syrup is the sweetener for this cocktail. Once you make simple syrup you can store it for 2 week and use it for a variety of different recipes.

- ½ Ounce Simple Syrup *Recipe in notes
- 2 Ounces Tequila
- Sparkling Water
- Ice
- Salt Garnish for the Rim, Optional
- Fresh Mint Garnish
- Blackberries Garnish
Instructions
- In a cocktail shaker or glass jar with a strainer, muddle the blackberries and mint until juice is extracted

Notes
- In a small saucepan, combine the sugar and water and bring to a simmer until the sugar is dissolved
- Remove the saucepan from the heat and allow the simple syrup to cool completely
- Store the simple syrup in a jar in the refrigerator until you are ready to use

I've not tried this with mint--that sounds delicious! I had something similar at a party but she made a pitcher of this using a whole bottle of sparkling wine (in place of sparkling water), a can of frozen lemonade concentrate, and a fair amount of tequila. I think she also included the blackberries during the preparation of the simple syrup.
I know this changes the outcome a bit but I couldn't find the recipe anywhere so I'm using yours as a base with a few tweaks! Yours sounds a bit "fresher" with the fresh blackberries, mint, and lemon juice so I will have to try it this way, too.
