Homemade Rainbow Sprinkle Mix
Funfetti Snack Cake
Preheat oven to 350 degrees F and prepare a 9 inch square cake pan with baking spray and lined with parchment paper.
In a large bowl combine the melted butter, granulated sugar, eggs, vanilla extract, buttermilk and sour cream; whisk until smooth and ingredients are fully combined
Add in the flour, baking powder and salt; whisk until smooth and creamy
Fold the rainbow sprinkles into the cake batter and mix until fully combined
Pour the cake batter into the prepared cake pan and bake for 20 minutes or until a cake tester comes clean
Remove the cake from the oven and all it to cool for approximately 30 minutes to 1 hour before icing
Vanilla Cream Cheese Frosting
White the cake cools, cream together the cream cheese and butter until smooth and creamy (scrape down the sides in between mixing)
Add the vanilla extract and powdered sugar and continue mixing until the frosting is light, fluffy and extra creamy.
Spread the frosting on the top of the cooled funfetti cake and spread around until the top is covered
Sprinkle the perimeter of the cake with the rainbow sprinkle mixture for decoration
Serve immediately or store in an airtight container until you are ready to serve
