    Easy Funfetti Snack Cake

    Funfetti Snack Cake is summers easiest and most festive cake! Made in one bowl, no layering required and the most moist, delicious and tender white cake loaded with rainbow sprinkles and topped with the creamiest vanilla cream cheese frosting! There is a whole lot of fun in funfetti!!

    Happy summer baking friends! We are in full swing summer over here with kids running around all day, in and out of the pool and outdoor entertaining before it gets way to hot outside! When I am baking for my family or friends I am trying to keep things effortless this summer and this Funfetti Snack Cake is perfect. It is a super moist and tender cake that is loaded with rainbow sprinkles and iced with the most delicious and creamy Vanilla Cream Cheese Frosting. Made in one bowl and baked into a one layer cake for ease of frosting and serving. You are going to love this!

    What is a Snack Cake?
    I love this term, Snack Cake, because it takes the fancy out of the cake. This cake is easy for anyone and everyone to make even if you are timid to frost a cake. This is a one layer cake with the frosting only on top! So easy to bake, super easy to serve and perfect for summer entertaining!

    Whether you are entertaining a crowd or a small group of friends, this funfetti snack cake will be a great addition to your table. Make your party extra colorful with this Rainbow Party Tablescape.

    Ingredient Notes

    Bowls of flour, sugar, buttermilk, melted butter, one egg, vanilla extract and rainbow sprinkles.

    Cake Flour-For a soft and tender cake texture, cake flour is the best flour to use. I would not substitute cake flour for any other flour or you will change the texture of the cake.
    Leavening Agent-
    This cake only needs baking powder to allow the cake to rise and have a fluffy texture.
    Butter-
    Unsalted butter melted and cooled will be mixed in to the batter and the course of fat for this cake.
    Sugar-
    Granulated sugar will sweeten the cake the perfect amount.
    Buttermilk-
    Give this cake the most delicious flavor and creates a super moist texture. I would not recommend substituting buttermilk for any other milk. If you don't have buttermilk you can use whole milk and lemon juice to make your own buttermilk.
    Sour Cream-
    Sour cream and buttermilk add a great flavor to this snack cake. You can replace the sour cream for full fat greek yogurt if you don't have sour cream on hand.
    Sprinkles
    - Rainbow jimmies are the best to mix into the cake batter. I would not use the nonpareils in the batter because the color tends to bleed.

    Cream Cheese-Full fat cream cheese is going to give the frosting a thick texture and rich flavor.
    Butter-
    Unsalted butter at room temperature!

    How To Make The Best Funfetti Snack Cake

    Prepare The Cake Batter

    In a large bowl combine the melted butter, granulated sugar, eggs, vanilla extract, buttermilk and sour cream; whisk until smooth and ingredients are fully combined 

    Add in the flour, baking powder and salt; whisk until smooth and creamy

    Fold the rainbow sprinkles into the cake batter and mix until fully combined

    Line and Bake The Cake

    Prepare a 9 inch square cake pan with melted butter or pan spray and line with parchment paper

    Spread the cake batter into the cake pan and bake at 350 degrees f for 18-20 minutes or until the cake bounces back at the touch or a cake tester comes out clean.

    Prepare The Frosting

    While the cake is baking, prepare the Vanilla Cream Cheese Frosting or Vanilla Buttercream Frosting and set aside until the cake is cooled

    Allow the cake to cool completely before spreading the frosting on top of the cake

    Homemade Funfetti Sprinkle Mix

    You can use a store bought sprinkle mix or make your own! I love the different colors, textures and sizes of a variety of sprinkles mixed together. Rainbow jimmies, nonpareils and confetti sprinkles are a great combination that will make this cake extra festive and fun!

    Decorate and Serve

    Decorate the top of the cake with your homemade sprinkle mixture and allow the frosting to set for 10 minutes before cutting and serving!

    For a clean cake cut, refrigerate the cake for 5 minutes to allow the icing to set. Dip your knife in hot water, wipe the water off and cut the cake into nine squares. Repeat this step for each slice to make sure that each piece is nice and neat!

    Tips and FAQS To Make The Best Funfetti Snack Cake

    Room Temperature Ingredients
    It is very important when baking a cake to have all your ingredients at room temperature. This will ensure that all ingredients gets mixed together evenly!

    How Do I Cut A Clean Cake Slice?

    There are so many ways to cut a cake, but I love to chill the cake for 10 minutes and then use a warm knife to slice the cake. Make sure to clean the knife with hot water in between each slice to remove the crumbs from the knife and have clean slice.

    I don't love cream cheese frosting, can I use another frosting?

    YES!! This cake will also be delicious with our favorite Vanilla Buttercream Frosting

    Can I make this a layer cake?

    This cake recipe can be doubled and used as a layer cake or you can use our favorite Classic Vanilla Cake and add sprinkles to this recipe to make a funfetti layer cake.

    Ingredients

    Funfetti Snack Cake

    • 2 Cups Cake Flour
    • 2 Teaspoon Baking Powder
    • ½ Teaspoon Salt
    • ½ Cup Unsalted Butter Melted and Cooled
    • 1 Cup Granulated Sugar
    • 2 Eggs
    • 2 Teaspoons Vanilla Extract
    • ½ Cup Buttermilk
    • ¼ Cup Sour Cream
    • ½ Cup Rainbow Sprinkles

    Vanilla Cream Cheese Frosting

    • 4 Ounces Cream Cheese Room Temperature
    • 4 Tablespoons Unsalted Butter Room Temperature
    • 2 Cups Powdered Sugar
    • 1 Teaspoon Vanilla Extract

    Homemade Rainbow Sprinkle Mix

    • ¼ Cup Rainbow Jimmies
    • ¼ Cup Rainbow Nonpareils
    • ¼ Cup Rainbow Confetti Sprinkles

    Instructions

    Funfetti Snack Cake

    • Preheat oven to 350 degrees F and prepare a 9 inch square cake pan with baking spray and lined with parchment paper.
    • In a large bowl combine the melted butter, granulated sugar, eggs, vanilla extract, buttermilk and sour cream; whisk until smooth and ingredients are fully combined
    • Add in the flour, baking powder and salt; whisk until smooth and creamy
    • Fold the rainbow sprinkles into the cake batter and mix until fully combined
    • Pour the cake batter into the prepared cake pan and bake for 20 minutes or until a cake tester comes clean
    • Remove the cake from the oven and all it to cool for approximately 30 minutes to 1 hour before icing

    Vanilla Cream Cheese Frosting

    • White the cake cools, cream together the cream cheese and butter until smooth and creamy (scrape down the sides in between mixing)
    • Add the vanilla extract and powdered sugar and continue mixing until the frosting is light, fluffy and extra creamy.
    • Spread the frosting on the top of the cooled funfetti cake and spread around until the top is covered
    • Sprinkle the perimeter of the cake with the rainbow sprinkle mixture for decoration
    • Serve immediately or store in an airtight container until you are ready to serve

    Homemade Rainbow Sprinkle Mix

    • Combine the assorted rainbow sprinkles in a small bowl and mix together
    • Store in an airtight container until you are ready to use
