Nut Free Apricot Quinoa Energy Bites

Ingredients

  • ½ Cup Old Fashioned Oats
  • 1 Cup Dried Apricots
  • ½ Cup Pitted Dates
  • 1 tsp Vanilla Extract
  • ¼ Cup Quinoa Puffs

Instructions

  1. Using a food processor, combine the oats, apricot, dates and vanilla extract; pulse until a paste forms
  2. Remove the apricot mixture and place in a bowl
  3. Stir in the quinoa puffs and mix until fully combined
  4. Using a small ice cream scoop, scoop the batter and roll into balls (I like mine to be about 1” in diameter)
  5. Place the energy bites in an airtight container and refrigerate until ready to eat
