    Spicy Pineapple Tequila Spritz

    Sunshine in a glass, Spicy Pineapple Tequila Spritz is so refreshing, bursting with flavor and made with only four ingredients. Pineapple juice, tequila, jalapeño simple syrup and sparkling water are the key ingredients to made this summer cocktail.

    Creating the perfect space to entertain, gather with family and friends, enjoying a morning cup of coffee and play card games with our kids was the goal of the wet bar room in our home. As I designed this room, I wanted something with elegance but also comfort and a place that I could create all my favorite cocktails, enjoy small bites and make memories.

    I was beyond excited when I found the perfect piece of art to compliment our navy blue walls and blush chairs. Lauren Williams Art has brought so much personality and conversation into this room and has quickly made this my favorite room in our home.

    As we discovered our love of art and cocktails together, I knew that I needed to create a special cocktail to showcase this space and her "Canvas with Movement". Spicy Pineapple Tequila Spritz is beautiful in color and bursting with flavor. I love the simplicity that tequila brings to this cocktail with the sweet and tart flavor of pineapple juice and the spicy homemade jalapeño simple syrup.

    Ingredient Notes

    A tequila bottle, a crystal bottle and a plate with dried pineapple with a lime slice.

    Pineapple Juice- fresh squeezed or 100% canned pineapple juice will work great for this cocktail. I love keeping the small cans of pineapple juice in my pantry so that I can make this cocktail on the fly and not waste a large can of juice.

    Lime Juice- Just a squeeze of lime juice adds a great balance to the sweet pineapple juice

    Tequila- Blanco tequila is the best tequila choice with a lighter and more transparent cocktail!

    Spicy Simple Syrup- Homemade jalapeño simple syrup is so easy to make! Made with granulated sugar, water and sliced fresh jalapeños for the perfect punch of spice. You can also buy a spicy simple syrup that will also work great.

    Salt- Course salt, spicy salt or Tajin all work great for the rim of the glass. This adds a perfect compliment to the sweet and tart drink.

    Step by Step Directions

    Prepare the Jalapeño Simple Syrup

    In a small saucepan over medium heat, combine the granulated sugar, water and sliced jalapeño and bring to a simmer 

    Once the sugar has dissolved completely, remove the syrup from the heat and allow it to cool completely 

    Once the syrup has come to room temperature, pour the spicy syrup into a glass jar and store in the refrigerator until ready to use

    Prepare the Pineapple Tequila Spritz

    Combine the pineapple juice, tequila, jalapeño simple syrup in a cocktail shaker filled with ice

    Shake the cocktail until fully combine

    Pour the Pineapple Tequila cocktail over a glass filled with ice and top off with a splash of sparkling water and a squeeze of lime juice

    Tips and FAQS To Make The Best Spritz

    Tequila
    I love trying different tequila brands when making cocktails and figuring out the best flavor profile for each tequila. Blanco tequila pairs perfectly with pineapple juice and is also the best choice for a transparent cocktail.

    Do I have to make it spicy?

    No! If you don't want to add the spice, just make a plain simple syrup with no jalapeño and use course salt instead of spicy salt or Tajin on the rim.

    Ingredients

    Spicy Pineapple Tequila Spritz

    • 3 Ounces Pineapple Juice
    • 2 Ounces Tequila
    • 1 Ounce Jalapeño Simple Syrup Recipe Below
    • 4 Ounces Sparkling Water
    • Lime Quartered
    • Dried Pineapple Garnish
    • Tajin or Spiced Salt Garnish the rim of the glass

    Jalapeño Simple Syrup

    • ½ Cup Granulated Sugar
    • ½ Cup Water
    • 1 Jalapeño Sliced with seeds removed

    Instructions

    Prepare the Jalapeño Simple Syrup

    • In a small saucepan over medium heat, combine the granulated sugar, water and sliced jalapeño and bring to a simmer
    • Once the sugar has dissolved completely, remove the syrup from the heat and allow it to cool completely
    • Once the syrup has come to room temperature, pour the spicy syrup into a glass jar and store in the refrigerator until ready to use

    Prepare the Spicy Pineapple Tequila Spritz

    • Coat the edge of the glass with a lime wedge and tajin seasoning and fill the glass with ice; set aside
    • Combine the pineapple juice, tequila, jalapeño simple syrup in a cocktail shaker filled with ice
    • Shake the cocktail until fully combine
    • Pour the Pineapple Tequila cocktail over a glass filled with ice and top off with a splash of sparkling water and a squeeze of lime juice
    • Garnish the glass with a piece of dried pineapple
