After a quick weekend getaway to Santa Barbara, California and many cocktails later, I was so inspired by the Gin Cocktails that were on the menu. So many creative flavors and I loved all of them. I have been so excited to recreate one of my favorites that I enjoyed, Lemon Cucumber Gin Fizz was at the top of my list and I love that I get to make in my own home.
The freshest and most flavorful ingredients that are a perfect way to head into spring. Fresh squeezed lemon juice, fresh juiced cucumbers, homemade lemon simple syrup, your favorite gin and to top it off, an egg white to make this an extra foamy fizz.
Another one of my favorite Gin cocktails is beautiful in color and a fruity flavor. Empress Gin is made with pea blossom to create a beautiful bluish purple color and I loved creating this Strawberry Gin and Tonic Cocktail.
Ingredients
- Gin- Pick you favorite gin for this cocktail! I love using local small batch distilleries, but also go with the bigger brands that are more popular. You can also make this super fun and colorful using Empress Gin for a magic purple color.
- Cucumber-Fresh juiced cucumbers will give this cocktail the most delicious spring flavor. Slice a large english cucumber and place it in the cup of the blender. Blend on high speed and then strain the liquid into a jar.
- Lemon-Fresh squeezed lemon juice is the way to go!
- Simple Syrup- Homemade Lemon Simple Syrup is made with only three ingredients and can be stored in the refrigerator to use for many different cocktails. Made with granulated sugar, water and lemon peel.
- Egg White- I love the addition of eggs whites in a cocktail because it adds the most beautiful thick foam on the top. If you prefer to enjoy this cocktail without the egg white, it will still taste amazing!
- Sparkling Water- A dash of sparkling water will add the extra fizz
- Garnish- Fresh mint leaves and sliced cucumbers are the perfect garnish for this light and refreshing cocktail.
What is Lemon Simple Syrup
My favorite addition to every cocktail is homemade simple syrup. There are so many great flavors you can make simple syrup into and it adds the perfect amount of sweetness to each sip. Made with only two ingredients, granulated sugar and water, simple syrup can be flavored with citrus, herbs or other fruits for a delicious addition to your favorite cocktail.
Once the simple syrup is made and poured into a jar, it can be stored in the refrigerator for 10 days. You will be ready at all times to make your favorite Gin Fizz.

- In a cocktail shaker combine the gin, fresh squeezed lemon juice, cucumber juice and lemon simple syrup and shake to combine
- Add the egg white to the mixed cocktail and shake to create a foam
- Pour the mixed cocktail into a glass with ice and top off with a splash of sparkling water
- Garnish the Lemon Cucumber Fizz with fresh mint leaves and a slice of cucumber

Cucumber Juice
Make sure to blend and strain fresh cucumbers for the most refreshing cucumber juice that tastes amazing in this cocktail. Yo can jar the juice and save the extras for another day!
Simple Syrup Vs. Agave Syrup
I love making homemade simple syrup so that I can flavor the syrup to go with my cocktail, but if you don't have time to make your own you can always add agave syrup or store bought simple syrup for an extra boost of sweetness in your cocktail.
Similar ingredients, but the main difference is a Gin Fizz is shaken and not poured straight into the glass for extra fizz. I also love the addition of the egg white for a foamy fizz.
Not at all! I love the addition of an egg white for a super foamy fizz, but you can just eliminate the egg white and shake it and top with sparkling water.
I would recommend using a cocktail shaker for a little extra fizz, but if you don't have one you can always stir the ingredients up and pour them into your glass. I might eliminate the egg white because it won't get foamy if it is not shaken.

Ingredients
Lemon Cucumber Gin Fizz
- 2 Ounces Gin
- 1 Ounce Lemon Juice
- 1 Ounce Cucumber Juice *
- ½ Ounce Lemon Simple Syrup recipe below
- 1 Egg White
- Sparkling Water
- Garnish: Fresh Mint and Sliced Cucumbers
Lemon Simple Syrup
- ½ Cup Granulated Sugar
- ½ Cup Water
- 1 Lemon Peel
Instructions
Prepare the Lemon Simple Syrup
- In a small saucepan combine the water, granulated sugared and lemon peel
- Bring the sugar and water to a simmer until the sugar is dissolved
- Remove the saucepan from the heat and allow the simple syrup to cool completely before pouring into a jar
- Store the simple syrup in the refrigerator until ready to use
Prepare the Lemon Cucumber Gin Fizz
- In a cocktail shaker combine the gin, fresh squeezed lemon juice, cucumber juice and lemon simple syrup and shake to combine
- Add the egg white to the mixed cocktail and shake to create a foam
- Pour the mixed cocktail into a glass with ice and top off with a splash of sparkling water
- Garnish the Lemon Cucumber Fizz with fresh mint leaves and a slice of cucumber
Notes
