Lemon Muddy Buddy Mix is one of those recipes that we all need for a little comfort. It is not to rich or to complicated and it only requires a few ingredients.
Ingredients You Need:
Rice Chex Cereal
White Chocolate
Unsalted Butter
Lemon Zest
Lemon Juice
Powdered Sugar
How To Make Lemon Muddy Buddy Mix
Lemon Muddy Buddy Mix is super simple and quick to make. Follow these steps to create a perfect spring treat that is loaded with fresh lemon flavor.
- Place the Chex cereal in a large bowl
- In a microwave safe bowl, combine the white chocolate, unsalted butter, lemon zest and lemon juice. Melt the white chocolate mixture in the microwave, stirring every 3o seconds or until the chocolate and butter are melted.
- The white chocolate should be smooth but will start to look a little grainy from the lemon juice. Make sure to pour the chocolate over the Chex cereal immediately once it is melted and gently stir to coat each piece in chocolate.
- Add the powdered sugar to the bowl of coated Chex cereal and toss. To keep things a little bit cleaner, you can add the powdered sugar and coated cereal to a large ziplock bag and shake until fully coated
- Pour the Lemon Muddy Buddy Mix into a serving bowl or store in an airtight container if it lasts that long!

Ingredients
6 Cup rice Chex cereal
1 Cup White Chocolate
2 Tbsp Unsalted Butter
1 Lemon, Zested
1 Tbsp Lemon Juice
1 ½ Cup Powdered Sugar
Instructions
Pour the rice Chex cereal into a large bowl; set aside
In a small microwave safe bowl, combine the white chocolate, butter, lemon zest and lemon juice
Microwave the chocolate mixture on medium for 30 second increments until the white chocolate is completely melted
Pour the white chocolate mixture over the Chex cereal and gently toss until each piece is fully coated
Pour the mixture into a large ziplock bag and add the powdered sugar
Shake the bag until each piece is fully coated
Store in an airtight container or pour into a serving bowl

What is the shelf life of this recipe? Does the moisture from the butter and lemon juice take away from the crunch after a day or two?

Hi Cara! This recipe stays the freshest for approx. 3-4 days. The white chocolate seals in the crunch from the cereal as long as they are stored in an air tight container!
