    Summer is the season for vibrant, fresh flavors and nothing highlights this better than a Melon Prosciutto and Burrata Salad with Homemade Pesto. This dish is a symphony of contrasting textures and tastes where the sweetness of ripe melons meets the savory richness of prosciutto and the creamy burrata cheese. Topped with a fragrant homemade pesto sauce and a drizzle of olive oil, this salad is not only stunning but also a delicious option for a light lunch or easy and sophisticated appetizer or side dish.

    Ingredient Notes

    Melon: Choose a ripe melon that feels heavy for its size and has a fragrant aroma. Cantaloupe and honeydew are excellent choices.

    Prosciutto: Opt in for a high-quality, thinly sliced prosciutto for the best flavor and texture

    Tomatoes: Bite size heirloom cherry tomatoes are the perfect size and flavor for this summer salad

    Burrata: Fresh burrata is essential. It should be soft and creamy on the inside.

    Pesto: There is nothing better than homemade pesto, but if you are short on time, store bought will work great as well.

    Olive Oil: A high quality extra virgin olive oil drizzle is the perfect finishing touch for this salad

    Basil: Fresh basil roughly chopped will enhance the pesto flavor and add a beautiful color

    How to Make The Best Melon Prosciutto Burrata Salad

    To create this refreshing salad, start with the finest ingredients. Choose a melon and tomatoes that are ripe, high quality prosciutto and burrata and fresh basil

    Make Homemade Pesto
    One of the key ingredients that takes this salad to the next level is the homemade pesto sauce. This can be substituted for store bought pesto, but I promise there is nothing better than fresh and homemade. In a food processor blend all the ingredients until they are smooth and creamy. Store the pesto in the refrigerator until ready to use and you can save any extra for a delicious pesto pasta for lunch or dinner the next day.

    Assemble the Salad
    It is important to assemble the salad just a few hours before serving. You don't want this salad to sit in the refrigerator overnight or it will all dry out. Cube the melon, slice the tomatoes and place on a platter. Add the burrata cheese, prosciutto and drizzle with pesto and sprinkle with chopped basil leaves.

    Once the salad is assembled, store in the refrigerator until you are ready to serve. Right before serving sprinkle the cheese with course salt and fresh ground pepper and drizzle with olive oil.

    What is Burrata?

    Burrata meaning "buttery" is a semi-soft cheese made from cow's milk. The outside is made of mozzarella and the inside is filled with a creamy combination of stracciatella and clotted cream.

    Ingredients

    Homemade Pesto

    • 2 Cups Fresh Basil Leaves
    • ¼ Cup Pine Nuts
    • ¼ Cup Shredded Parmesan Cheese
    • ½ Cup Extra Virgin Olive Oil
    • 1 Garlic Clove
    • 1 Tablespoon Lemon Juice
    • Salt and Pepper to taste

    Melon Prosciutto and Burrata Salad

    • 4 Cups Fresh Cantaloupe Cubed
    • 1 Cup Heirloom Cherry Tomatoes Cut in half
    • 7 Slices Prosciutto
    • 2 Balls Burrata Cheese
    • 4-6 Basils Leaves Roughly Chopped
    • 3 Tablespoons Homemade Pesto
    • Garnish: Course Salt, Ground Pepper, Olive Oil Drizzle

    Instructions

    Homemade Pesto

    • In a food processor or blender combine all the ingredients and blend on high speed until smooth and creamy
    • Remove from the blender and store in a mason jar or air tight container in the refrigerator until ready to use

    Melon Prosciutto and Burrata Salad

    • Add the cubed melon and halved cherry tomatoes onto a platter
    • Place the burrata cheese on top of the melon and slightly pull of cut open to see the soft creamy filling
    • Arrange the prosciutto spaced throughout the salad
    • Top the salad with Pesto, fresh cut basil and a drizzle of olive oil
    • Sprinkle course salt and fresh ground pepper on the burrata cheese balls
    • Serve immediately or refrigerate until ready to serve!
