Store the pesto in the refrigerator until ready to use and you can save any extra for a delicious pesto pasta for lunch or dinner the next day.
Assemble the Salad
It is important to assemble the salad just a few hours before serving. You don't want this salad to sit in the refrigerator overnight or it will all dry out. Cube the melon, slice the tomatoes and place on a platter. Add the burrata cheese, prosciutto and drizzle with pesto and sprinkle with chopped basil leaves.

Ingredients
Homemade Pesto
- 2 Cups Fresh Basil Leaves
- ¼ Cup Pine Nuts
- ¼ Cup Shredded Parmesan Cheese
- ½ Cup Extra Virgin Olive Oil
- 1 Garlic Clove
- 1 Tablespoon Lemon Juice
- Salt and Pepper to taste
Melon Prosciutto and Burrata Salad
- 4 Cups Fresh Cantaloupe Cubed
- 1 Cup Heirloom Cherry Tomatoes Cut in half
- 7 Slices Prosciutto
- 2 Balls Burrata Cheese
- 4-6 Basils Leaves Roughly Chopped
- 3 Tablespoons Homemade Pesto
- Garnish: Course Salt, Ground Pepper, Olive Oil Drizzle
Instructions
Homemade Pesto
- In a food processor or blender combine all the ingredients and blend on high speed until smooth and creamy
- Remove from the blender and store in a mason jar or air tight container in the refrigerator until ready to use
Melon Prosciutto and Burrata Salad
- Add the cubed melon and halved cherry tomatoes onto a platter
- Place the burrata cheese on top of the melon and slightly pull of cut open to see the soft creamy filling
- Arrange the prosciutto spaced throughout the salad
- Top the salad with Pesto, fresh cut basil and a drizzle of olive oil
- Sprinkle course salt and fresh ground pepper on the burrata cheese balls
- Serve immediately or refrigerate until ready to serve!
