    As the summer heat intensifies, finding the perfect refreshing side dish becomes essential. Watermelon Blueberry Feta Salad with Lemon Vinaigrette is a delightful combination of sweet juicy watermelon, tart blueberries and creamy feta cheese, all tied together with a zesty lemon vinaigrette. This salad is not only made up of beautiful colors but also bursting with the perfect flavor. Whether you are hosting a backyard bbq or looking for a light and healthy lunch, this salad is sure to impress.

    Ingredient Notes

    A white bowl filled with watermelon cubes, another bowl filled with blueberries next to a bowl filled with white feta cubes, a bowl of chopped up mint leaves and a jar of vinegarette.

    Watermelon
    Choose a ripe watermelon for the best flavor, cut it into bite sized cubes or use a melon baller for a fun presentation.

    Blueberries
    Fresh, plump blueberries are key! They should be firm to the touch and have a deep blue color. You can also add blackberries and raspberries to add another element of flavor.

    Feta Cheese
    Use a high quality feta cheese and I prefer to use a block so you can also cut it into cubes. If you can't find a feta block, crumbled feta is also great!

    Fresh Mint
    Fresh mint adds a burst of freshness and flavor and pairs perfectly with the watermelon and cheese. Chop the mint leaves up to ensure you get a piece in each bite.

    Lemon Vinaigrette
    Using all fresh ingredients, lemon juice, olive oil, honey and seasoned with salt and pepper. This will be the perfect pairing to your watermelon salad.

    Prepare the Vinaigrette

    • In a small bowl whisk together the lemon juice, olive oil and honey until fully combined.

    Prepare the Watermelon Salad

    • In a large bowl combine the watermelon cubes, blueberries, feta cubes and chopped fresh mint and gently mix to combine
    • Drizzle the lemon vinaigrette over the watermelon and gently toss
    • Transfer the Watermelon Salad onto a serving platter or individual bowls, garnish with fresh mint and serve immediately! Enjoy!

    Tips To Make The Best Watermelon Salad

    Chill the Ingredients
    Make sure all the ingredients are chilled before assembling the salad. This will ensure that the salad is refreshing.

    Serve Immediately
    To prevent the watermelon from releasing too much juice, making the salad too watery, combine all ingredients just before serving.

    Ingredients Substitutions
    This salad can be adjusted to your liking, I love also adding raspberries and blackberries to add another layer of flavor or substitute the fresh mint for fresh basil! If feta is not your favorite cheese, goat cheese is a great substitution.

    Ingredients

    Watermelon Blueberry Salad

    • 6 Cups Watermelon Cubed
    • 1 Cup Fresh Blueberries
    • 1 Cup Feta Cheese Cubed
    • 6 Mint Leaves Chopped

    Lemon Vinaigrette

    • 3 Tablespoons Fresh Lemon Juice
    • ¼ Cup Extra Virgin Olive Oil
    • 1 Tablespoon Honey
    • Salt and Pepper to taste

    Instructions

    Prepare the Lemon Vinaigrette

    • In a small bowl whisk together the lemon juice, olive oil, honey and salt and pepper until combined; set aside

    Prepare the Watermelon Salad

    • In a large bowl combine the watermelon cubes, blueberries, feta cubes and chopped mint leaves and gently toss to mix
    • Drizzle the Lemon Vinaigrette over the salad and gently toss to coat
    • Transfer the salad to a serving platter or individual bowls, garnish with fresh mint leaves and enjoy immediately!
