Heading into the first week of summer and celebrating the end of an unusual school year, kids friendly treats are taking over my kitchen. I love a classic Rice Krispie treat, loaded with marshmallows and Rice Krispie cereal, but this is such a fun dessert to add new ingredients and take it from simple to decadent with only one additional ingredient. Adding peanut butter into our beloved Rice Krispie Treats takes these square, crunchy cereal treats to a whole new level and I am loving every bite of the Peanut Butter Cup Rice Krispie Treats.
Ingredients to make Peanut Butter Cup Rice Krispie Treats:
Unsalted Butter
Classic Rice Krispie Treat require a small amount of butter, but adding a few additional tablespoons really helps to create a buttery and soft texture for these cereal bars.
Mini Marshmallows
The most famous ingredient in this recipe, marshmallows are the glue to bind everything together. I prefer using the mini marshmallows instead of the large ones because they melt much easier and more evenly. The more marshmallows added, the softer and chewer these treats become. There is a fine line of making Peanut Butter Cup Rice Krispie Treats to crunchy or way to gooey and soft. Adding the perfect amount of marshmallows gives these a chewy texture while preserving the crunch
Creamy Peanut Butter
Creamy Peanut is the ingredient that changes this from kid friendly to family friendly. Wow, adding peanut butter to the butter and marshmallows while they are melting makes these taste like the perfect candy bar. If you like the addition of a little crunch, you can add crunchy peanut butter to add more texture to these bars. I would not recommend using a natural peanut butter because it tends to separate and will change the texture of the bars.
Rice Krispie Cereal
Once the butter, marshmallows and peanut butter are stirred in and melted the next step is adding the Rice Krispie cereal. You want to make sure the you remove the pan from the heat while you are stirring the cereal into the pan and gently stir until the cereal is coated completely.
Semisweet Chocolate + Coconut Oil
Once the Peanut Butter Rice Krispie Treats are prepared in poured into the pan, you can begin melting the chocolate and coconut oil to create a perfect glaze on top. I love the addition of chocolate to resemble our favorite peanut butter cup candy.

Ingredients
Peanut Butter Rice Krispie Treats
4 Tbsp Unsalted Butter
½ Cup Creamy Peanut Butter
6 Cups Mini Marshmallows
5 Cups Rice Krispie Cereal
Chocolate Glaze
1 Cup Semisweet Chocolate Chips
1 Tbsp Coconut Oil
Instructions
Prepare an 9×9 inch square pan with parchment paper
In a large saucepan, melt the butter completely
Once the butter is melted, add in mini marshmallows and peanut butter; stir until completely melted
Remove the saucepan from the heat and stir in the Rice Krispie cereal into the marshmallow and peanut butter mixture and mix until fully coated
Pour the mixture into the prepared pan and using another sheet of parchment paper, press the rice krispie treats down until they are flat and even in the pan
While the Peanut Butter Rice Krispie Treats are cooling, melt the chocolate and coconut oil in a microwave safe bowl, stirring every 30 seconds until fully melted
Pour the chocolate over the Peanut Butter Rice Krispie Treats and spread until fully covering the top
Allow the chocolate to cool and dry completely before removing the rice krispie treats from the pan
If you would like them to cool quickly, place the pan in the refrigerator until the chocolate is set
Once the chocolate is dry, remove the Peanut Butter Cup Rice Krispie Treats from the pan and cut them into 2x3 inch bar or your desired size
Serve at room temperature or store in an airtight container until ready to serve
