    The Best Gluten Free Peanut Butter Cookies

    The easiest and most delicious Gluten Free Peanut Butter Cookies are made with 4 ingredients and are super soft and chewy with a dash of sea salt.

    There is nothing easier then this four ingredient flourless peanut butter cookie that is naturally gluten free. You will never know there is no flour in this recipe because it has the softest and chewiest consistency, holds its shape beautifully and is truly The Best Gluten Free Peanut Butter Cookie.

    Cookies are so easy to whip up and share with family and friends, a perfect after school treat or can be the end to a delicious dinner. These Gluten Free Peanut Butter Cookies are to good to pass up, but we also really love our Soft and Chewy M&M Cookies or for another gluten free option, the Chocolate Mudslide Cookies are so decadent.

    Ingredients

    A bowl of peanut butter, brown sugar, egg, vanilla extract and sea salt.

    Peanut Butter-Use no stir creamy peanut butter, I prefer Jif Creamy Peanut Butter.
    Brown Sugar-Light brown sugar is the perfect sweetness and helps to create a soft cookie.
    Egg-Just one egg needs to be whisked before combining with all the other ingredients.
    Vanilla Extract-Adding a light vanilla flavor to this cookie, but most important to make sure to get real vanilla extract and not imitation.

    Step-by-Step Directions

    Peanut butter, brown sugar, one egg and vanilla extract in a white bowl.
    • In a medium bowl, combine the peanut butter, light brown sugar, whisked egg and vanilla extract; mix until fully combined
    • Chill the cookie batter for 10 minutes to allow the dough to harden and scoop easier

    • Preheat the oven to 350 degrees F and prepare a baking sheet with parchment paper 
    • Scoop the Peanut Butter Cookies onto a lined baking sheet, gently press them down and using a fork create a grid design on top
    • Sprinkle each cookie with course sea salt 
    • Bake for 10-12 minutes or until the cookies are slightly golden brown
    • Allow the cookies to cool completely before moving them from the baking sheet (they will be very soft until they cool down)

    Tips and FAQS To Make The Best Gluten Free Peanut Butter Cookies

    Peanut Butter
    Choosing your peanut butter is the most important ingredient in this recipe because it will determine the texture of these cookies. I prefer Jif Creamy Peanut Butter for the best consistency, but whatever Peanut Butter you choose make sure that it is no stir.

    Chill The Batter
    Chilling the batter for at least 10 minutes will make them so much easier to scoop. The batter might feel sticky at the beginning but will get thick once it is cold and will be perfect to scoop.

    I love using an ice cream scoop for all of my cookies. I always have a small, medium and large size scoop in my kitchen at all times for a variety of size cookies.

      Delicious, Naturally Gluten Free and so easy to make! The salt adds the best flavor! Next time I’m going to add a drizzle of chocolate to the top!
