    Chocolate Caramel Mousse

    Chocolate Caramel Mousse is a dream to bite into. Made with only five ingredients, rich flavors of caramel combined with semi sweet chocolate and whipped cream will be the perfect way to end a meal.

    A chocolate lovers dream, Chocolate Caramel Mousse is a gourmet dessert made in your own home and a perfect ending to any meal. Although making mousse can be intimidating, it is actually a super simple process with a high end result.

    As the holidays are approaching, I love to keep my pantry stocked with ingredients that I can use to whip up a dessert in no time. Chocolate Caramel Mousse only has five ingredients and does not require any baking. Flourless Chocolate Cake and this Chocolate Caramel Tart are also holiday favorites to share with the special people in your life.

    Ingredients

    Bowls of egg yolks, sugar, butter, chocolate, heavy cream.

    Sugar- Caramelizing granulated sugar can be scary, but if you take it slow you will love the process. Make sure that all sugar is fully dissolved before adding the butter so that it doesn't crystalize.
    Butter- A small amount of unsalted butter will make this caramel extra creamy and rich.
    Heavy Cream- There are three parts of this recipe with heavy cream. The first addition is to create a creamy caramel sauce, the second addition is whipped to soft peaks and folded into the chocolate caramel mixture and the third addition is the Fresh Whipped Cream garnish and the perfect way to finish this mousse!
    Egg Yolks-ONLY the yolks!!! Adding yolks to the chocolate caramel will ensure a very rich and thick mousse.

    Directions

    • In a small sauce pan add the granulated sugar and on low heat, allow the sugar to melt and caramelize to a medium amber color (make sure all sugar is dissolved)
    • Once the sugar is at the desired caramel color, add in the butter and heavy cream and slowly whisk until fully combined and smooth (the caramel will get hard for a second and then will melt back down)

    • Remove the caramel from the heat and add in the semi sweet chocolate chips; slowly whisked until fully combined and smooth

    • In a small bowl, add the egg yolks
    • Add a small amount of the warm chocolate caramel into the bowl with egg yolks and mix until combined, add the chocolate and egg mixture back into the remaining chocolate caramel and whisk until smooth
    • Allow the chocolate caramel to cool completely

    • Using an electric mixer with whisk attachment, whisk the 1 ½ cups of heavy cream to soft peaks 
    • Gently fold the whipped cream into the chocolate caramel mixture

    Homemade Caramel Sauce- Add an extra touch of homemade caramel sauce. This recipe will be perfect mousse, an ice cream topping or the filling for a tart or pie.

    Choose a High Quality Chocolate-when you are making chocolate mousse, the chocolate flavor is going to really stand out so make sure to choose a good quality chocolate like Valrhona 60%.

    Add Some Salt- What is better than Salted Chocolate Caramel Mousse? A dash of course sea salt to garnish this chocolate mousse recipe will really take this to the next level.

    What is mousse?

    Mousse is a super rich yet light and airy dessert. There are several different methods to make mousse, but all mousse is started with a base (usually fruit or chocolate) and then folded into whipped cream.

    Why does this mousse have egg yolks?

    Egg yolks are a great stabilizer and thickener for mousse. I love the consistency the eggs yolks bring to the mousse versus just a light and airy texture.

    Are the egg yolks raw?

    No! whisking the egg yolks into the hot chocolate caramel will cook the eggs which is why you have to slowly add the hot mixture to the egg yolks so they don't cook too fast and curdle. This is called tempering the egg yolks

    How far in advance can I make this dessert?

    The chocolate caramel mousse can be made a day in advance, but make sure to add the whipped cream garnish just a few hours before serving.

    Ingredients

    • ½ Cup Granulated Sugar

    Vanilla Whipped Cream

    • 1 Cup Heavy Whipping Cream
    • ¼ Cup Powdered Sugar
    • 1 Teaspoon Vanilla Bean Paste or Vanilla Extract

    Vanilla Whipped Cream Garnish

    • Before serving the Chocolate Caramel Mousse, whisk the heavy cream, powdered sugar and vanilla bean paste in an electric mixer until soft peaks form
    • Scoop the Vanilla Whipped Cream onto the top of the mousse
    • Garnish with chocolate shavings!
