A chocolate lovers dream, Chocolate Caramel Mousse is a gourmet dessert made in your own home and a perfect ending to any meal. Although making mousse can be intimidating, it is actually a super simple process with a high end result.
As the holidays are approaching, I love to keep my pantry stocked with ingredients that I can use to whip up a dessert in no time. Chocolate Caramel Mousse only has five ingredients and does not require any baking. Ingredients
Sugar- Caramelizing granulated sugar can be scary, but if you take it slow you will love the process. Make sure that all sugar is fully dissolved before adding the butter so that it doesn't crystalize.
Butter- A small amount of unsalted butter will make this caramel extra creamy and rich.
Heavy Cream- There are three parts of this recipe with heavy cream. The first addition is to create a creamy caramel sauce, the second addition is whipped to soft peaks and folded into the chocolate caramel mixture and the third addition is the Fresh Whipped Cream garnish and the perfect way to finish this mousse!
Egg Yolks-ONLY the yolks!!! Adding yolks to the chocolate caramel will ensure a very rich and thick mousse.
Directions
- In a small sauce pan add the granulated sugar and on low heat, allow the sugar to melt and caramelize to a medium amber color (make sure all sugar is dissolved)
- Once the sugar is at the desired caramel color, add in the butter and heavy cream and slowly whisk until fully combined and smooth (the caramel will get hard for a second and then will melt back down)
- Remove the caramel from the heat and add in the semi sweet chocolate chips; slowly whisked until fully combined and smooth
- In a small bowl, add the egg yolks
- Add a small amount of the warm chocolate caramel into the bowl with egg yolks and mix until combined, add the chocolate and egg mixture back into the remaining chocolate caramel and whisk until smooth
- Allow the chocolate caramel to cool completely
- Using an electric mixer with whisk attachment, whisk the 1 ½ cups of heavy cream to soft peaks
- Gently fold the whipped cream into the chocolate caramel mixture
- Scoop the chocolate caramel mousse into bowls or cups; refrigerate until ready to serve

- Garnish with chocolate shavings!
