Ingredients
Olives-Choose assorted olives that you love; black, green, kalamata, but make sure they are pitted!
Olive Oil-A good quality extra virgin olive oil is key to making great marinated olives.
Herbs- Fresh herbs like rosemary and thyme, add the perfect flavor paired with citrus.
Lemon- Making these olives full of citrus flavor, there is lemon juice and lemon rind on this recipe. The rind is the peel of the lemon.
Garlic- Fresh and thinly sliced garlic!
Step-by-Step Directions
- Combine the olives in a wide mouth jar; set aside
- Combine the olive oil, thyme, rosemary, lemon rind and garlic in a small sauce pan and warm on low heat
- Pour the olive oil mixture over the olives and then pour the fresh lemon juice over the olives
- Close the lid of the glass jar and shake the olives until fully combined
- Refrigerate the marinated olives for 2-3 hours or up to 2 weeks
Tips and FAQS To Make The Best Marinated Olives
Olives- Sometimes olives can be extra salty from sitting in their juice so make sure to drain and rinse them in a strainer before marinating.
Glass Jars-When marinating the olives, make sure to use glass jars that are cleaned so that no other flavors or scents will sneak into the marinated olives. Make sure to have an airtight container as well that will keep these fresh for several weeks!
These olives can marinate for 2 hours and have a wonderful flavor, but the longer they marinate the better they get. Ideally 24 hours will create a beautifully flavored citrus marinated olive.
Yes! Any olive that you love will work for marinated olives. I prefer to get pitted olives; black, green or Kalamata, but olives with pits will also work just fine!
