    Caramel Peanut Butter Blossom Cookies

    The ultimate cookie of the season, on every holiday cookie platter and a simple recipe that everyone loves and a little caramel to go along with it.  Caramel Peanut Butter Blossom Cookies are made with the softest peanut butter cookie, rolled in granulated sugar, a thumbprint of caramel sauce and a chocolate kiss!

    Cookie Week is rounding out with a quintessential Christmas cookie that we all know and love.  A classic Peanut Butter Blossom Cookies  is  simple to make and so cute to look at, but even better with the addition of caramel.  The combination of chocolate caramel is perfection and then add a soft and chewy peanut butter cookie, you are in for a treat!

    What is a Peanut Butter Blossom Cookie 
    The ultimate peanut butter cookie has to be packed with peanut butter flavor, soft and chewy.  This peanut butter cookie recipe is just that and makes the most beautiful thick texture that keeps the shape and a thumbprint to fill with caramel a chocolate kiss.  Each peanut butter cookie is rolled in granulated sugar for a little extra crunch and it makes the cookies shimmer and are holiday ready!

    Ingredients You Need 

    Peanut Butter Cookie Dough
    All Purpose Flour
    Baking Soda
    Salt
    Unsalted Butter
    Creamy Peanut Butter
    Light Brown Sugar
    Egg
    Vanilla Extract 

    Sugar Topping
    Granulated Sugar 

    Caramel Filling
    Caramel Candy Squares, unwrapped
    Heavy Whipping Cream

    Chocolate Kisses 

    How To Make Peanut Butter Blossom Cookies

    Peanut Butter Cookie Dough

    • combine the flour, baking soda and salt; set aside
    • In a mixing bowl with a paddle attachment cream together the butter, peanut butter and light brown sugar until smooth and creamy
    • Add the egg and vanilla extract and continue mixing until fully combined
    • Slowly add in the dry ingredients until incorporated (do not overmix)
    • Scoop the peanut butter cookie batter into 1 ½ inch balls and roll each cookie ball in the granulated sugar topping
    • Place the cookie dough on the prepared sheet sheet approximately 2 inch apart and press a thumbprint into each cookie (just in the center, do not flatten the cookie dough)
    • Bake the cookies for 8-10 minutes
    • Remove the cookie from the oven and spoon a small amount caramel sauce into each thumbprint indention and place a chocolate kiss on top of the caramel sauce and gently press down
    • Allow the cookies to cool completely and the chocolate kiss to harden back up

    Caramel Filling

    • While the cookies are baking place the caramel candy squares and the heavy whipping cream in a microwave safe bowl
    • Microwave for 30 second increments, stirring in between until completely melted

    Tips For Making The Best Blossom Cookies

    • This peanut butter cookie dough recipe does not need to be refrigerated before baking
    • Do not press the cookies down on the baking sheet
    • Once the cookies are baked and the chocolate kiss is pressed into the cookie allow it to cool completely or the chocolate kiss will be very soft  or you can quickly refrigerate the cookies to allow the chocolate kiss to harden back up before serving

    Peanut Butter Cookie Dough
    1 ¾  Cup All Purpose Flour
    1 teaspoon Baking Soda
    ½ teaspoon Salt
    ½ Cup Unsalted Butter
    ½ Cup Creamy Peanut Butter
    ½ Cup Light Brown Sugar
    1 Egg
    1 teaspoon Vanilla Extract

    Sugar Topping
    ½ Cup Granulated Sugar

    Caramel Filling
    12 caramel squares, unwrapped
    3 Tablespoons Heavy Whipping Cream

    30 Chocolate Kisses

    Instructions

    Peanut Butter Cookie Dough

    1. Preheat oven to 350 degrees F and prepare a baking sheet with parchment paper
    2. In a medium bowl combine the flour, baking soda and salt; set aside
    3. In a mixing bowl with a paddle attachment cream together the butter, peanut butter and light brown sugar until smooth and creamy
    4. Add the egg and vanilla extract and continue mixing until fully combined
    5. Slowly add in the dry ingredients until incorporated (do not over mix)
    6. Scoop the peanut butter cookie batter into 1 ½ inch balls and roll each cookie ball in the granulated sugar topping
