    White Chocolate Peppermint Rice Krispie Treats

    White Chocolate Peppermint Rice Krispie Treats are a classic turned festive. Made with Rice Krispies cereal, mini marshmallows, peppermint extract, and dipped in white chocolate for a holiday treat that adults and kids will love!

    Holidays are spent in the kitchen and around the table and we all tend to get the most creative this time of year. But sometimes you just need a quick, easy, and fail-proof recipe. One that can be whipped up in just a few minutes and still tastes like a million bucks. This recipe for White Chocolate Peppermint Rice Krispie Treats is just that! With a fun and festive twist using peppermint extract, white chocolate, and crushed peppermint, you are in for a Christmas treat!  

    If you've ever made traditional rice krispie treats, you'll know just how easy it is to whip these up and serve a treat that everyone loves. With the addition of a few toppings, these White Chocolate Peppermint Rice Krispie Treats are still so simple to make. If you're ever looking for another fun twist on the classic, try these Funfetti White Chocolate Rice Krispie Treats.

    Ingredients

    • Butter- Unsalted butter will melt with the marshmallow for the perfect bite
    • Marshmallows- Mini marshmallows melt the easiest!
    • Rice Krispies Cereal- The crunchy star of the show
    • Peppermint- Peppermint extract and crushed peppermint both add the festive flavor
    • White Chocolate Chips- For the rich white chocolate glaze

    Directions

    • In a large saucepan, melt the butter completely
    • Once the butter is melted, add in 6 cups of mini marshmallows and stir until completely melted
    • Remove the saucepan from the heat and add in the peppermint extract and stir in the Rice Krispie cereal; mix until fully combined 
    • Pour the mixture into the prepared pan and allow it to cool completely before cutting
    • Once they are ready to cut, remove the Rice Krispie Treats from the pan and cut them into three equal strips, and then cut each strip into triangle pieces  
    • Place the triangles onto a baking sheet while you melt the white chocolate

    • In a medium microwave-safe bowl, melt the white chocolate chips and the coconut oil in the microwave for 30-second increments until the chocolate is melted and smooth
    • Dip the top of each triangle rice krispie treat into the white chocolate and place back on the baking sheet to allow the chocolate to dry
    • Once the chocolate is dry, drizzle the top of each with the remaining white chocolate and sprinkle the lines with crushed peppermint
    • Enjoy!

    Tips for White Chocolate Peppermint Rice Krispie Treats

    • Make sure you allow the rice krispie treat mixture to completely cool in the pan before you cut, or else it will be too soft to do anything with.
    • There are so many ways to get creative with how you decorate these treats! You can dip half of each treat in the chocolate for a different look, or skip the dipping altogether and just drizzle the glaze for a more simple look. It's up to you, but the good news is they will be delicious either way!

    Ingredients

    Rice Krispie Treats

    • 4 Tablespoon Unsalted Butter
    • 6 Cups Mini Marshmallows
    • ½ teaspoon Peppermint Extract

    White Chocolate Glaze 

    • 2 Cups White Chocolate Chips
    • 1 Tablespoon Coconut Oil or Vegetable Shortening
    • ¼ Cup Crushed Peppermint

    Instructions

    • Prepare an 8×8 inch square pan with parchment paper
    • In a large saucepan, melt the butter completely
    • Once the butter is melted, add in 6 cups of mini marshmallows and stir until completely melted
    • Remove the saucepan from the heat and add in the peppermint extract and stir in the Rice Krispie cereal; mix until fully combined 
    • Pour the mixture the prepared pan and allow it to cool completely before cutting
    • Once they are ready to cut, remove the Rice Krispie Treats from the pan and cut into three equal strips and then cut each strip into triangle pieces
